What You Will Do
This tour is all you have to know about the production of Parma’s traditional products: Parmigiano Reggiano and Parma Ham.
After the pick up at the meeting point, you will ride to "Casello" where the milk is cooked and the process of cheese making begins. Then your tour leader will take you to visit the brine room. These cheesemakers will explain the secrets of milk processing and you will see how the artisan cheese diaries work with their hands. You will have the opportunity to see the full process of how the experts make the famous cheese. Before leaving the factory, you will enjoy a glass of wine with Parmigiano Reggiano.
The tour continues to Parma Ham’s factory. The process starts with the arrival of the fresh pork legs then the experts will proceed with salting, resting, washing, drying, curing, greasing and branding.
